In the present work, the effect of irradiation on the kinetic stability of aqueous solutions of various gelling high-molecular compounds (starch, gelatin, pectin, wheat flour, gluten, etc.) was investigated. It was shown that already at an absorbed dose of 0.2-0.4 kGy (kJ/kg), the irradiation of aqueous solutions provides the aggregation and precipitation of high molecular weight gelling impurities. Depending on the type of gelling impurity, various effects are observed, including discoloration of diluted gels and a decrease in their turbidity. In gels containing mineral impurities, including heavy metals (Cr, Pb, Cd, Hg), radiation-induced aggregation of high-molecular substances is accompanied by a decrease in the concentration of these mineral impurities. The removal of various dyes, including food (E102, E122, E133, etc.) is accelerated in a similar way. However, in the presence of dyes, the dose required to completely remove gelling impurities increases. At the same time, precipitates separated from irradiated diluted gels differ by 2–4 times higher filterability, and sometimes higher biodegradability.
