In recent years, a number of studies have produced evidence that the multiphase and boundary effects caused by surfactants have to be taken into account for the development of innovative antioxidant technologies for oil containing products. This report presents some unusual antioxidant effects due to the influence of surfactants, which occur only in multiphase systems. The protective and antioxidant role of surfactants in oil oxidation is considered on the examples of anionic and nonionic surfactants and their mixed reverse micelles with hydroperoxides, the primary oxidation products. The retarding action of external magnetic field on the yield of radicals during hydroperoxide decomposition in the presence of cationic surfactants or acetylcholine in oil media resulted in the inhibition of oil oxidation in micellar system, is discussed. It is noteworthy that the effect of the magnetic field decreases in the presence of paramagnetic particles such as oxygen and relatively stable radicals.
