It is now generally accepted that vitamin D deficiency is a worldwide health problem that affects not only musculoskeletal health but also a wide range of acute and chronic diseases. Vitamin D deficiency occurs in 50–90 % of children and adults in Russian Federation. Vitamin D may to synthesize in skin exposed to ultraviolet radiation and supplied with food. The main food source is a marine oil-rich fish, but the frequency of fish consumption is not enough. Insufficient vitamin D dietary intake and limited production of vitamin D from sunlight during the majority of the year, may explain the high prevalence of vitamin D insufficiency. Maintenance of the optimal vitamin D status is infeasible due to insufficient exposure to sunlight. Special attention should be given to vitamin D intake by means fortified with vitamin D foods. Analysis of the international experience of food fortification with vitamin D hаd been conducted. Assortment of vitamin D fortified foods and their contribution to consumption of vitamin D hаd been presented. Creation of specialized lipid module containing both PUFA and vitamin D, had been proposed to enrich foods.
